Preparatory Phase Dietary Protocol
The week leading up to the fast is a vital time to prepare your body and mind for cleansing. During these seven days, you will be eliminating potentially harmful substances from your diet and lifestyle (e.g. coffee, alcohol, tobacco, etc.) and transitioning your system towards a fasting state. This will be accomplished by gradually tapering your diet and increasing your fluid intake. If at any time you have any questions or concerns, please don't hesitate to call your counselor.
Please follow these simple guidelines for each day: Day 1 - Eliminate all sources of caffeine, nicotine and alcohol from you diet (coffee, caffeinated sodas and teas, cigarettes and alcoholic beverages). If you feel that completely eliminating caffeine would cause you extreme hardship, limit yourself to a maximum of on-third to one-half of your normal intake. Taper as quickly as possible and aim to be completely free of caffeine by Day 3 at the very latest. Eliminate white flour and all sugars from your diet. This includes all products made with white flour, rice, pasta, tortillas, whole grain breads or cereals, etc.). Drink a minimum of eight to ten 8-oz. glasses of water or herbal tea (stay away from sodas, juices or other caloric-containing beverages - these frequently contain high levels of sugar, caffeine, and other harmful chemicals). Day 2 - Continue all changes made on Day 1. Eliminate red meat from your diet. Reduce your intake of dairy products, especially cheese. Obtain your protein from chicken, fish or legumes (beans, peas and lentils). Obtain a minimum of 5 servings of fresh or lightly-steamed vegetables (avoid canned or processed products). On your salads, use olive oil and vinegar, or fresh-squeezed lemon juice for dressing (avoid commercially-prepared dressings). Focus on obtaining 2-3 servings of fruit from fresh sources (eliminate juices and canned/processed products). Increase fluid intake to at least eight 8-oz. glasses of water or herbal tea (a minimum of 64-oz. of liquid needs to be water). Day 3 - Continue changes made on preceding days. Eliminate dairy products (cheese, milk, cottage cheese, yogurt, etc.) and eggs. If you typically eat three meals per day, change to eating more frequent light meals (five to six light meals throughout the day). Fluid intake same as Day 2. Day 4 - Continue changes from preceding days. Eliminate all remaining animal products (e.g. chicken, fish). Decrease your intake of all grains and starches (rice, breads, cereals, etc.). Continue light frequent meals (avoid large quantitites of food at one time). Fluid intake same as Day 2. Day 5 - Continue changes from preceding days. Decrease grains and starches to a maximum of two small servings. (You will be eating mainly fresh or lightly-steamed vegetables and some fruit.) Fluid intake same as Day 2. Days 6 and 7 - Eat small, frequent meals of only fresh or lightly-steamed vegetables. Add one to three (maximum) servings of fresh fruit daily. Fluid intake same as Day 2.

Post Fast Protocol
Your body will need time to adjust to a normal diet after the fast. Gradually increasing your diet over the course of a week or two should allow your sytem to adapt to eating regular food once again. If at any time during the transition, you experience discomfort, go back to eating only those items which you had no problem tolerating. Increase your diet more slowly after that. As always, feel free to consult with your counselor whenever any questions or problems arise. Consider meeting with a specialist in any areas that you would like to make the most changes (e.g. Registered Dietician, Exercise Therapist, Stress Management Counselor, etc.) Your Bonne Sant
Follow these simple steps after the fast to ensure a smooth transition back to your regular diet. Day 1 - Eat a small portion of well-cooked vegetables three times throughout the day (avoid high-roughage vegetables like broccoli, corn, green beans, etc.) Choose instead items that are easily digested (think baby food). Avoid prunes or prune juice until regular diet is resumed. Continue to drink plenty of fluids. Day 2 - Increase the volume of cooked vegetables and fruit to a minimum of 3-4 servings each. Try some soft, ripe fresh fruit (peel fruit if it has a skin and avoid seeds). Try some crackers. Continue to eat small, frequent meals. Day 3 - Add one to three small servings of steamed brown rice. Continue to eat small, frequent meals. Day 4 - Add one to three servings of tender chicken or fish (if part of your regular diet). Prepare without any added fat (no frying or breading) and remove the chicken skin. Avoid overly spicy items. Increase your variety of starches (add one to two from your regular diet: e.g. sweet potato (no skin), pasta, brown rice, wheat bread, grains. Use nonfat (or minimal fat) sauces or toppings if necessary. Steam all vegetables. Continue fresh fruit without seeds or skins. Day 5 - Add one or two servings of fresh (raw) vegetables if desired. Continue fresh fruits as tolerated. Proceed to whole grain starches. If you chose to include dairy products in your diet, try a small carton of unsweetened yogurt with active/live cultures.
